🍜 Toshikoshi Soba — Long Noodles, Long Life

Eaten on New Year's Eve across Japan, these long buckwheat noodles symbolise longevity and letting go of the old year's troubles. The tradition is to slurp them before midnight — it's noisy, it's fun, and it's delicious.

We make ours with homemade bonito-kombu dashi and crispy vegetable kakiage. Though it's an evening tradition, enjoy it whenever you like. That's the beauty of starting your own rituals.

🍲 Ozōni — Lucky Mochi Soup

🍲 Ozōni — Lucky Mochi Soup

The first meal of the New Year in many Japanese homes. Soft, chewy mochi in a warm, clear broth with winter vegetables — it's comfort and good fortune in a bowl.

Every region in Japan has its own version. Ours is Hokkaido-style: gentle, savoury, like a warm hug on a cold morning. Though it's traditionally a morning dish, it's delicious whatever time of day!

🥢 Matsumae-zuke — For the Adventurous Foodies

A Hokkaido delicacy with over a hundred years of history. Strips of dried squid and kombu kelp, marinated with herring roe in a sweet soy sauce mixture. It's intensely savoury, a little slippery, and packed with umami.

In Japan, herring roe symbolises prosperity and kombu brings joy — so this is a lucky bite as well as a tasty one. Traditionally served as part of the New Year spread, it's perfect as a side dish with rice or a snack with sake.

A real taste of japan right here in Herts!
